I'm still experimenting with what I'm feeding Nimo, but here is what I'm doing as of December 30, 2018.  I will also post some information about books/articles/websites I use for nutrition information.

3 lb oats (steamed and crimped)
1.5 lb beet pulp (shredded with molasses)
1 lb stabilized rice bran
6 oz ground flax seed
2 oz coconut chips
1 Tbsp Crushed Redmond Rock
5 lb alfalfa
free choice orchard grass/timothy hay

Note:  I split the foods that aren't hay into 3 separate feedings.

Susan E. Garlinghouse, DVM - This website is frequently referenced by endurance riders.  There are quite a few articles focused on nutrition for the endurance horse.  And the famous story about Beet Pulp Safety is on this site (spoiler alert - beet pulp is safe for your horse, but maybe not for your house!).

Nutrient Requirements of Horses - This book is the standard for nutrition requirements and is usually the book upon which other nutrition books base their advice.  The cost is a bit pricey (between $85 and $100), but you can read it online for free here.
